The vast African region has a rich diversity of flavors and cooking styles, a mixture of influences from within and outside the continent. North African cooking has similar elements to Middle Eastern cuisine. Their main ingredients include olives, grapes, figs, dates, pomegranates, almonds, grains, beans, dried fruits, breads, bean spreads and couscous.
Sub-Saharan and Southern Africa cooking has the elements from the North and different cultures including Indian, English, French and Portuguese. These regions dishes include goat, lamb, rice, aubergines (eggplants) and dried tomatoes. Western and Central African staples are mealies, corn cobs, cassava, fish and vegetables such as okra, squashes and beans. South African region staples include potatoes, dried meats (biltong), sausages (boerewors) and boboties (mixture of meats and spices). Eastern Africa staples include rice, maize, beans and fish.
Throughout the region tropical fruits and nuts are used to make desserts, stews and sauces. There is diverse choice of herbs and spices. Peppery stews are common. Coconut milk and peanut sauce is largely used to cook rice, vegetables, beans and meats. Cooking oils include olive oil, sunflower oils, soy bean oil and oils from nuts. All regions of Africa use coffee and teas that are drunk with meals and after meals. Kenya and South Africa are known for their teas and coffee. The horn of Africa is known for some of the best coffees in the world.
